So, a tip for making “bruschetta” far more delicious (but not traditional) is to macerate the cut up tomatoes in some delicious balsamic vinegar, with a touch of sugar and salt. Traditional bruschetta doesn’t have balsamic, because it doesn’t need it. tomatoes homegrown and ripened on the vine in actual sunshine are delicious; tomatoes purchased anywhere are a mess. This makes the tomatoes taste a bit like strawberries, too.
With all of that said, I am straight drooling over the strawberry goat cheese version above. I can’t wait to give it a try.
