Eating healthy in the winter is hard, because I live in Ohio, and the only plant that flourishes here in the snowy months is pot. And. that’s grown indoors.
Once spring hits, we are all collectively craving fresh produce.
Asparagus is a relatively new addition to our diet. Since we have shifted our focus into getting as many vitamins into Jude as possible, taking him to the store with me and letting him pick out foods that look fun has yielded a whole new palette.
Asparagus has been a big hit, mostly because the kids can do much of the prep work, which leaves me free time better spent drinking and watching the Royal Wedding off the DVR.
I could do without the smelly pee, though.
- 1 Large Bunch of Asparagus, rinsed, dried and trimmed
- 1 Lemon
- 3 tbsp Chopped Garlic
- 1 tbsp Kosher Salt
- Olive Oil to coat
- 1 gallon size Ziploc bag
- Toss the asparagus into the gallon size ziploc bag, and add the garlic, salt and olive oil.
- Seal the bag and smoosh around to coat evenly.
- Put in the fridge for about an hour to marinate.
- Once it's ready, heat your oven to 400 degrees, and spread asparagus evenly over a large cookie sheet covered in foil (way less messy).
- Cook for 20 minutes.
- After you remove from the oven, squeeze with fresh lemon juice and serve!

I am not one of those people and cook asparagus about once or twice a week. My pee is as fresh as PineSol.

I read in an article once that asparagus makes everyone’s pee smell, but some people lack the particular sense of smell to actually smell that their pee stinks. Does that make sense?

Nummy. My husband and I both went to culinary school and love love love fresh produce =) We like to mix in a bit of tomato and baby bella mushrooms with our asparagus.
My hubby makes the best roasted asparagus! I’m not sure how healthy it is, but we’re getting some green in our diets so it’s all good.
He takes a bunch of asparagus and trims it down and then tosses with EVOO, salt & pepper and spreads it on a pan. Then he dumps a ton of grated parmesan on top and bacon bits (the real bacon kind) and puts them in the oven for 12 minutes at 450 degrees. Enjoy!
Loooove asparagus! It’s best tossed with EVOO and seasonings and put on the grill though. Ready in minutes and so crisp and tasty!
This. This is my absolute favorite vegetable. I discovered this a few months ago and started cooking asparagus like a *fiend*.
I super love asparagus! For the longest time though I had no idea what was causing my funky pee smell until a computer teacher mentioned it. No clue how that conversation even came up in a computer class but I guess it had to do with most of the students being in their 20’s and 30’s and all women. :O

We’re big asparagus eaters in our house too. I roast it most often, but it’s also great grilled.
we eat asparagus a lot and use the same ingredients on ours. they are GREAT like that on the grill.
Love asparagus! Our household prepares it with olive oil, salt, pepper and parmesan cheese in the oven or on the bbq. Delicious! Learned myself a little ’bout asparagus the other day and need to share….don’t trim the spears with a knife! Hold it at both ends and bend it towards you until it snaps. It magically snaps off right above the spot where the asparagus turns woody. Changed my life! ;)
Best tip I’ve learned is to do that trick to one and then place it back with bunch and use it as a guide for the rest of them. Just cut through them all at the same point so they’re the same length!
We grill asparagus, which seems like it would be similar. Just a little sea salt and olive oil. They cook very quickly though, so don’t turn your back on ’em.
There’s an exhibit about asparagus and making your pee smell at our local Tech museum in the body section and they said it’s genetic. So not everyone’s pee stinks.
You either have or don’t have an enzyme in your body that will cause you to have funky smelling pee if you eat certain foods, one of them being asparagus. I think it’s funny!
Going to have to try this receipe. I’ve done one similar with garlic powder and olive oil for the marinade and then sprinkle with parmesan and bread crumbs and roast in the oven. This one sounds great with the lemon at the end, plus I need to cutback on the cheese already.
I make chicken roll ups using asparagus that my kids actually request, which means it’s definitely good.
We pound out the chix breast and then mariande them in garlic, S & P and a little olive oil for about 10 minutes and then roll up a bundle of aparagus spears, prisciutto slices and provolone cheese inside the chix breast and then secure with a toothpick. We saute the rolls to add a little browning and then finish in the oven. I make a honey mustard gravy to go with and the kids go apes over them.

This is one of our favorite standard dinnertime side dishes!
To make it a little less messy, though, instead of doing the plastic bag + shaking we bought one of those refill-able olive oil spritzers (from World Market) and spritz the asparagus directly once it’s on the pan. I think that cuts down a bit on the excess oil, too.
So basically this dish will make you smell from both ends. Winning!
Also, try it on the grill as well. Yummy.
