Ok, I’m not going to beat around the bush, there is almost nothing healthy or redeeming about this recipe, it is pure bar food.
On the couch, in your sweatpants, drinking beer, watching your big screen, bar food.
There is a bar here called Jed’s, and they specialize in putting sauces and random unexpected food on chunks of chicken. It’s not healthy, but it’s thoroughly amazing at curing hangovers or break-ups.
My favorite Jed’s dish are the Fungus Balls, which is a plate of chicken chunks coated in hot sauce, then covered in sauteed mushrooms and melted cheese with blue cheese on the side for dipping.
I know.
Not only is this dish super easy to make at home, it’s also super low carb, and super delicious…aka I share with no one and moan the entire time I’m eating it.
- 3 Large Chicken Breasts, cut into bite size chunks
- 1 Container of mushrooms, sliced
- Shredded Cheddar Cheese
- ½ cup Hot Sauce (I'm partial to Franks Original, 0 carbs)
- 2 tsp butter, melted
- Extra Virgin Olive Oil
- Salt & Pepper
- Heat a thin layer of olive oil over medium high heat in a large pan.
- Season the chicken chunks with salt and pepper.
- When the oil comes to temperature, begin browning the chicken until cooked through, set aside.
- Add 1 tsp of butter to the pan, and saute the mushrooms until soft and cooked through.
- Add hot sauce and 1 tsp of melted butter to a baggie or bowl with a lid, toss in the cooked chicken chunks, and toss to coat.
- Put your coated chicken chunks on a plate, cover with sauteed mushrooms, then coat heavily with cheddar cheese.
- For added cheese melting, toss on the microwave for 40 seconds, or a warm stove.
- Serve with Ranch or Blue Cheese on the side for dipping.

Yes! These are my absolute favorite! We used to live by a Jed’s back in the day and I was obsessed with these bad boys. I need to make these at home now.

Also, after re-reading the recipe, is it really that bad for you? The base of it is low-fat chicken breast and there are also mushrooms. The hot sauce isn’t that bad and sure, there’s butter and cheese but only 2 tsps of butter and a little shredded cheese goes a long way. Maybe I’m delusional but just because something looks good doesn’t necessarily mean it is going to kill you.
Actually no, and the butter could easily be skipped and it’s only 2 tsps. I think the most unhealthy aspect would be a dipping sauce, but again, it’s in a small increment and can easily be nixed.

That’s one of the things I love about low carb, you don’t have to cut out things like butter and full-fat blue cheese! Thanks so much for sharing your recipes, I get bored with my own recpe ideas and it is nice of you to share yours.

I agree this doesn’t look all that bad you could always use 2% cheese or fat free-not that I would, but one could if they wanted to & I have Texas Pete hot wing sauce & it is only 30 calories in 2Tbsp
