Huevos Rancheros

Because sometimes, you can't opt for a little hair of the dog.
Ingredients
  • 4 corn tortillas (These are so cheap and come in a huge stack, I freeze them in groups of 4)
  • 1 can Refried Beans
  • 1 can Black Beans (drained)
  • 2 Eggs
  • Sour Cream
  • Guacamole (Buy premade packets of this and freeze it.)
  • Shredded Cheese
  • Vegetable Oil
  • Hot Sauce
Instructions
  1. In a medium sized pan, heat up the refried beans on one side and the drained black beans on the other. Just heat them through, as the refried beans are much more easy to spread when warm. (This can also be done in the microwave.)
  2. Coat the bottom of another pan with vegetable oil and heat over medium heat. Once to temperature, fry up the corn tortillas, one at a time. You want them still bendable, but crispy, so about 5 minutes on each side. Set them aside to drain and sprinkle with just a touch of sea salt.
  3. In the same pan you fried the tortillas, fry your eggs. I prefer over easy. Hangovers love runny eggs.
  4. Now it's time to assemble. 1 Fried corn tortilla, spread with refried beans, top with black beans, then top with the second fried tortilla, followed by 1 fried egg. Repeat to make another stack.
  5. Top with guacamole, sour cream, shredded cheese, and loads of hot sauce.
