I kind of can’t cook anything other than spaghetti sauce, Sloppy Joes, and pulled pork BBQ. This recipe may not be the most creative, or the most healthy, but it’s pretty much the quickest eat-at-home dinner I can create and still say we’re eating at home. Plus, it has every food group: protein, vegetables, breads, dressing.
This is pretty much my go-to dinner for nights when I don’t feel like spending more than 5 minutes in the kitchen or dragging the kids out of the house to a restaurant. Make it for just yourself or a family of 8; just adjust the ingredients to your family size.
Personally, if you don’t use Ken’s Honey Mustard salad dressing on this salad, you’re missing out. It’s the only salad dressing we’ve found that tastes exactly like restaurant dressing.
And if you can find them, the Sea Salt and Pepper Jumbo Croutons by Chatham Village go best on this Big Salad. I could eat them by the bagful. I imagine.

| Popcorn Chicken Honey Mustard Big Salad |
- 1 bag Romaine hearts
- 8 oz deli popcorn chicken
- Jumbo croutons
- Ken’s Honey Mustard salad dressing
- Dump or chop Romaine lettuce.
- Re-heat popcorn chicken in microwave.
- Pile chicken and croutons onto lettuce.
- Cover generously with Ken’s Honey Mustard salad dressing.
Don’t let the fluorescent yellow of the honey mustard fool you. It’s delicious.

Ken’s makes a low fat version of their honey mustard that is also super yummy and would make it a bit healthier
They only make it in the small container though, bummer.
I’m afraid to try the low-fat version. I know, issues…
I refuse to eat low fat or fat free ranch, so I totally get it. Its just not the same
Kens is my favorite Honey Mustard, and Publix does make damn good friend chicken.
I liked buying the tenders and making a buffalo blue cheese and bacon tacos with them. To die for!
This could be an even tastier treat with added chopped veggies, maybe some kidney or garbanzo beans. Boosts the health factor, too!
