Grilled Romaine

This is a life changing recipe.

I was chatting with a girlfriend when she mentioned trying this and I immediately knew I had to see what it was all about. You can curl your nose at it now, but just wait … I’m 98% sure you’ll change your tune.

 

Grilled Romaine
Recipe Type: Salad

Grilled Romaine is an easy and delicious addition to your summer grill that will wow your crowd.
Ingredients
  • Romaine Lettuce
  • Extra Virgin Olive Oil
  • Parmesan Cheese
  • Balsamic Vinegar
Instructions
  1. This recipe can take a new shape every time you use it. There are no hard and fast rules as to how much of any ingredient you need to use.
  2. Simply douse your heart of Romaine in EVOO, I drizzle generously, making sure to cover the entire heart.
  3. Sprinkle parmesan cheese over the romaine being sure to rotate for full coverage.
  4. Place directly on your grill and turn every few minutes. About 2 on each side/rotation.
  5. Place on a plate and drizzle with balsamic vinegar, slice and serve as a salad side.

That sounds great! I saw an episode of “Kitchen Nightmares” a few weeks ago where the restaurant served grilled Caesar Salad. Chef Ramsey thought it was the most vile thing in the world and made them take it off their menu. I thought it looked pretty good. Chef Ramsey seems to be a bit pretentious.

I like grilled romaine as long as it’s not grilled to the point of wilting. Topped with a caesar vinaigrette and some shaved parm it can be really fun. Making sure it’s completely dried from water first is clutch, otherwise the water will steam and it’ll get wilty and gross.

Good tip! I was afraid of it getting too wilted and I didn’t drain the water before grilling – the inside was still crisp with a great smokey flavor and the outside was a bit wilted, but I LOVED it – which was a complete surprise to me. Next time I try it, I’ll make sure it’s drier and see if that changes it drastically for me.
