Greek Melon Salad

This deceptively complex salad has three ingredients, but it’s fun, different, and welcome at any barbecue. I was inspired by Greek flavors, and by a crazy sale on honeydew melons (one of my absolute favorites). The salad ended up great, and people couldn’t believe it was as easy to prep as I claimed. I believe the term “liar” was thrown around rather loosely, but I’m almost certain they were either kidding or drunk.

To be honest, I feel like a sham even calling this a “recipe,” but it was so good and so unexpected and good FOR you that I want you to be able to recreate it at home and tell me how much you loved it.

A bright fruit “salad” that contains only one fruit, but a variety of fab flavors.
Ingredients
  • 2 honeydew melons, peeled and cubed
  • 2 C Greek yogurt, honey-flavored
  • 2 T chopped fresh mint
Instructions
  1. Toss together the ingredients and serve it up immediately!
