The Almost Apple Crisp

Apple Crisp is one of my favorite desserts. It’s crumbly and tart and decadent and comforting. It’s like an edible hug! You can imagine my happiness when I found a recipe for a calorically-friendly version!

Truth be told, this recipe is not quite an apple crisp, and it’s not quite an edible hug. It’s more of an edible reassuring pat on the back for not eating three days worth of calories in one sitting. This version is still yummy, and even my foodie husband gives it two thumbs up.

Ingredients

  • 1 tbsp. water
  • 1 small apple
  • 2 tsp. Splenda No-Calorie Sweetener (or sugar, if you’re not keen on Splenda)
  • 1 tsp. ground cinnamon
  • 2 tbsp. old-fashioned oats (I’ve used both the quick-cook & regular oats with no problems)

Put water into bottom of a custard bowl.

Peel, core, and slice apple. (Chopping instead of slicing the apple also works nicely.)

Place the slices in the custard bowl.

In a separate small bowl, combine Splenda, cinnamon, and oats.

Sprinkle oat mixture on top of apples.

Microwave 1-2 minutes or until apples are tender. (Or, in oven, bake at 350 degrees for 20 minutes or until apples are tender.)

After it’s been cooked, you can eat it as-is or mix the topping in with the apples—I prefer the latter.

This is a quick and easy way to fulfill that comfort food craving. Enjoy!

Thanks for the low-cal version. Mine is pretty much chopped, sugared apples covered in butter cookie dough and cinnamon. So, pretty much anything would be healthier than that. BUT, I justify it because it contains fruit…. ;)

Ok, as promised:

4 cups of sliced and peeled apples tossed with sugar to lightly coat.
1/4 cup hot water
1/2 cup of butter
1/2 cup of flower
1/2 cup of sugar

Arrange apples in baking dish and pour hot water over the apples.
Cream butter, flower and suger together until it’s crumbley.
Sprinkles crumbs over apples.
Bake at 400 for 40-45 minutes.

Good when served warm with ice cream. Also, really good right out of the fridge in the middle of the night…

I love you for this. No, seriously: apple crisp is one of my favourites, but I rarely make it because I’m lazy (peeling ALLLLL those apples! D:). YAY!

I made apple crisp to take as desert to friend’s house just recently. Now, said friend was training for a marathon, so I had to health it up big time so she could eat it.

Combine:
1 cup chopped apples (I left the peels on for fiber and it was all good)
1 cup frozen berries
1 tbsp vanilla (vanilla adds a sweetness without calories)
dump in bottom of glass baking dish
Combine:
1/2 cup oats
1/4 wheat germ (protein)
scant 1/8 cup brown sugar
1-2 tbsp melted butter/extra virgin olive oil (just enough to combine topping)
sprinkle over apple/berry mixture.

Bake at 350 until bubbly and crispy
