We Crave: Caramel Apple Cupcakes

When I think about Fall I think pumpkin patches, trick-or-treating, and of course, caramel apples. But this year not just caramel apples, but caramel apple cupcakes!

They’re easy to make and gooey to eat.

What you need:

1 yellow cake mix (plus ingredients to prepare mix)

1 granny smith apple, peeled, seeded, and chopped

1 teaspoon ground cinnamon

1 cup pecans, chopped

20 caramels, unwrapped and chopped into quarters; or 1 package (11 ounces) Kraft caramel bits

3 Tablespoons milk

24 paper muffin liners

To make cupcakes:

Prepare cake batter according to package directions. Add cinnamon and apples.

Fill 24 paper-lined muffin cups with batter. Bake at 350 degrees for 20 minutes or until toothpick inserted comes out clean. Cool in pans for 10 minutes and then move to wire racks to cool completely.

In a saucepan, cook caramels and milk until smooth. Drizzle over cupcakes and then sprinkle with pecans.
