Blue Moon Cupcakes with Orange Frosting

Two things you should know about me are that I have giant metallic cupcakes on the wall in my kitchen, and that I enjoy drinking beer. By combining cupcakes and beer into one recipe, your day will drastically improve.

How? I’m not certain. But when was the last time that beer and cake were a bad idea?  These particular cupcakes have the signature twang and refreshing crispness of a good, summery brew, and are topped with a bright citrus punch of orange in the frosting.

The one downfall, I will say, is that there tends to be a lot of beer sampling that happens while one makes beer cupcakes.  Which means that by the time the cupcakes are cool enough to frost, the frosting looks like it was applied by drunk orangutans.  Orangutans who thought that used beer bottle caps would make a festive cake-toppers.

I’ve broken this into two recipes for ease of preparation.

The cupcake portion of this dessert will blow your mind, even before adding frosting. And then the frosting will blow your backup mind.
Ingredients
  • *For the cupcakes*
  • 1 stick plus 2 T butter, softened
  • 1 1/2 C sugar
  • 3 eggs
  • 1 1/2 C plus 2 T AP flour
  • 1/3 C Blue Moon beer (or your favorite wheat beer), foam subsided but not flat
  • ——————————————————
  • *For the Frosting*
  • 1/2 C butter, softened
  • 5 C powdered sugar
  • 4 T Blue Moon beer (or your favorite wheat beer)
  • 2 T orange juice
  • 1/8-1/4 t powdered orange drink mix (unsweetened)
Instructions
  1. *For the cupcakes*
  2. Preheat oven to 350 F
  3. In a mixer, beat together butter and sugar for 10 minutes, until extremely fluffy
  4. Add eggs, one at a time, being careful to incorporate completely before adding the next egg
  5. In 3 portions each, alternate adding flour and beer until a batter forms. Adjust and add more beer if the batter seems too stiff for cupcakes.
  6. Line a muffin tin and fill each well 2/3 full
  7. Bake until springy in the center but not overcooked– approximately 20-25 minutes
  8. Cool completely before frosting

  10. *For the Frosting*
  11. In a mixer, beat together the butter, powdered sugar, and orange drink mix until thoroughly combined
  12. Combine the beer and orange juice
  13. Slowly drizzle the beer/OJ into the frosting until you reach the desired consistency. It should be firm enough to hold peaks, but not so firm that it tears the cupcake apart

Have you tried making cupcakes using Blue Moon? I have made cupcakes using the cake mix and adding 2 1/2 cups of Club Soda and nothing else. So I’m thinking maybe you could us beer, also???? Let me know if you try it.
