I’ve seen them pinned and repinned across Pinterest, and it’s hard not to drool. I mean, Blue Moon cupcakes? LET’S GET DRUNK AND EAT CAKE, Y’ALL!
But, like most things I pin, I never get around to making them, because I don’t bake. Like, I don’t even own baking type supplies…. like flour and measuring spoons and stuff.

I found a couple really great recipes, but all of them required making everything from scratch, and I was about 2 hours away from our New Years Eve party with not a supply in sight.
Plus, after reading lots of comments and reviews, it seems the general consensus was that all the cupcakes were coming out more MUFFINY and less CUPCAKEY. No bueno.
I had boxed cake mix, beer, a bag of oranges my in-laws sent me from Florida, and some powdered sugar, so I took some inspiration from the internet and developed my recipe in an easier, way lazier fashion.
Easy Blue Moon Cupcakes
Cake Supplies:
1 Boxed Cake Mix (Yellow or White, making it per instructions may require you to also have oil and eggs on hand)
1 Bottle Blue Moon
1 tsp Orange Zest
Cupcake Liners
Frosting:
5 cups Powdered Sugar
1/2 cup Butter, soft/melted
4 tbsp Beer
2 tbsp Orange Juice
Garnish:
1 Orange
1/2 cup Citrus Vodka (I used Absolut Mandrin)
Tip: You’re going to prepare the boxed cake mix exactly like the directions on the box, the difference being you are going to substitute the water with beer.
1. Open two bottles of beer. Drink one, and let the other one sit. It’s best to work with when it’s a little less foamy.
2. Pre-heat the oven per the cake box instructions.
3. Prep garnish. Slice the orange into small slices, place in a bowl and cover with Mandrin Vodka.
4. Mix the cake batter, replacing the water with beer and add in 1 tsp of orange zest. Fill the cupcake liners just under 3/4 full. These cupcakes will rise.
5. Bake to the low end up the box baking instructions, I baked mine for 15 minutes at 325 degrees.
6. Assemble the frosting: mix the powdered sugar and melted butter in a large mixing bowl (use a spoon at first, not your mixer, or the sugar will fly everywhere and you’ll look like a coke addict).
7. In a small bowl mix the 2 tbsp orange juice and 4 tbsp beer, and slowly add that to the sugar while mixing on low until you get your desired frosting consistency.
8. When the cupcakes are done, let them cool before frosting. Garnish with the vodka infused orange slices.
Remember, don’t cupcake and drive.

I’ve read the directions on Pinterest and thought “eh, too much work”. But this seems right up my lazy ally. Can’t wait to try!
Seriously, it’s just altering boxed mix, and if you want to get super lazy, buy some vanilla whipped frosting in a can, add some orange zest and beer, mix, and boom. Probably tastes awesome as well.
I think doctored cake mixes are always the best bet! Once I was in line at the grocery and the dude behind me had an entire cartful of box cake mixes. I asked him if he was jonesing for some cake and he told me it was for a local bakery. :o Even they use the box.
Booze in place of water is great. Coffee in place of water in chocolate is great too.

I used a box mix last night too, adding beer instead of water and adding orange zest. But for the frosting I used Pillsbury buttercream frosting and added a splash of beer and oj to it before frosting. Never though to infuse the orange slices!

I was just all, “I should totally make these for a fun dessert tonight!” and then realized I have exactly two of the needed ingredients: beer and butter. Guess I need to go shopping!

Very delicious! Couldn’t really taste too much of the beer, has anyone tried upping the amount? Or doing more beer/less oil?

These were a huge hit.. Light moist and delightful.. What I did was poke holes in my cupcakes and soak it with the bear sort of like u would do a tres leche cake… And the frosting was a hit.. I soaked my oranges for 24hrs in vodka.. Those were awesome alone..
