Cauliflower is the new potato?
Ummm..maybe? Let me put it this way, I can make it taste good, not like a potato, in fact, I’d compare this dish more to a risotto in terms of consistency, but hey, comfort food is comfort food.
Plus, hello, it’s low carb, if you dig that sort of thing, either way, it’s good eats.
Like I said, I love treating this as a risotto, and it’s amazing along side a steak or some grilled chicken, or a stand alone meal. Toss in veggies and even add some grilled shrimp, and you’ve got heaven in a bowl, right there.
This dish is crazy easy, stupid cheap, and ridiculous tasty. Is that enough adjectives for you?
What you’ll need:
1 Large head of cauliflower
5 Button mushrooms, chopped
Shredded Cheddar Cheese
A large spoonful of Cream Cheese (NOT LOW FAT!)
A large spoonful Sour Cream (NOT LOW FAT!)
1 tbsp Butter
Salt and Pepper
Pre-heat oven to 400 degrees.
Rinse and cut up the florets from the head of cauliflower.
Place in a steaming bowl with water, and microwave for 20 minutes.
Drain and use a fork or mixing beater to mash up the cauliflower, it should be very soft and easy to smoosh into a mashed potato-like consistency.
Add in the butter, sour cream, cream cheese, salt and pepper and mushrooms.
Stir to mix, then pour into a 8×8 glass baking dish.
Cover with cheese, and bake for 15 minutes, or until cheese is melted and golden brown.

Don’t shoot me, but I probably would do reduced fat for the dairy. We are doing vegetarian for Lent, so I can’t wait to try this!
Low fat is fine, but not for low carb, so that NOT LOW FAT only applies for that specific reason, you are good to go!

On a low-carb diet, you need fats for satiety. If you’re on a different diet, then it makes more sense to cut the fat. I personally tend to lean more toward the South Beach version of low carb eating which allows more carbs–so I eat a lot of yogurt, cottage cheese, etc. and they do low-fat on that diet. But not NO fat and not all the time. Plus, you should be aware that most low-fat products replace the fat with carbs…

I’ve never tried cauliflower, it looks scary. But anything with cheese and well, cheese I think I can handle.. I might have to try this!

Yeah it’s not diety at all, it’s honestly just like eating LESS potatoes and sugar, that’s all.

I make something similar, but I don’t microwave the cauliflower. I simmer it in chicken stock on the stove top. We call it California mashers, because that’s what they call it on the menu at Houlihans. You can also saute onions & garlic prior to simmering the cauliflower. But that might be a little highbrow.

There is less carbs in the full fat version of food. When it’s low fat and processed, more carbs are added:)
Looks really really really good and cauliflower is my favourite vegetable, much to the distaste of my DH. I always thought the only way to make cheese sauce was to faff about making a white sauce first, then add the grated cheese. Delia Smith’s way will be getting a boot up the arse so I can try this one instead, looks easier and much more yummy. Thanks :D

Hmmm. What does cauliflower even taste like? Does it mush up enough that you could trick your family into believing it was, in fact, mashed potatoes? Because that is what I have to do these days, trick them into eating things :)
I can’t really explain what it tastes like, but my kids eat this and think it’s potatoes…so win?
I make a version more like potatoes, must dry the cauliflower a lot after steaming and blend it with an immersion blender and treat like potatoes, with heavy cream. And the bake for about 15 minutes with pats of butter. My husband was in love!

although why on earth would you microwave the hell out of the cauliflower when you can boil or steam so much faster?

Ooo! We are doing low carb too. It sucks a nut. I have a recipe for cauliflower crust pizza that’s pretty decent, we also do smashed cauliflower with cheeses and butter. After this diet, I never want to see celery and peanut butter or cauliflower again.
Holy freakin balls! Made this last night (left out the mushrooms cause the hubs is anti-fungus, and added some chopped green onion…) It was SOO delicious!! I am NOT a cauliflower fan by any means, but my husband loves it – so I thought I’d give it a whirl. This recipe is awesome because you could customize it however you want – can you say BACON?! Thanks for the recipe Mrs. Gibbons – it’s a “keeper”!!

I have a similar recipe that uses Parmesan cheese and more cream cheese and oh my god it is so good, you’ll eat it even if you aren’t low carbing or don’t like cauliflower.
OMG, this recipe is so yummy looking that I actually can’t wait to race home from work to make this….for myself! Okay, I’ll share but seriously, this will now be my most favorite cauliflower dish!

Wow! My husband is the main person that cooks. Not that I can’t . . . but I have been known to live off of nachos, fried eggs, and orange juice for months at a time.

My husband makes these amazing enchiladas with cauliflower and zucchini filling! I will have to try your recipe one night when he’s at school. Make a dairy free portion for the baby and put his cheese on mine and we ALL WIN!
